Preparation
- Preheat your oven to 400°F (200°C).
- Lightly grease a baking dish with a drizzle of olive oil.
- In a small bowl, whisk together the lemon juice, olive oil, garlic powder, paprika, salt, and pepper.
- Place the cod fillets in the prepared baking dish. Pour the lemon and olive oil mixture evenly over the fillets.
Cooking
- Bake in the preheated oven for about 15-20 minutes until the cod flakes easily with a fork.
- Garnish with fresh parsley before serving.
Serving
- Plate the cod and serve hot, either on its own or with a side of your favorite vegetables or rice.
Notes
For a crunchy topping, consider adding breadcrumbs mixed with melted butter. Store leftovers tightly covered in the refrigerator for up to three days and reheat gently in the oven.
