  • 4 pieces cod fillets Choose fresh, firm cod for best results.
  • 1 piece lemon (juiced) Freshly squeezed lemon juice is preferred.
  • 2 tablespoons olive oil Use extra virgin for a better flavor.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika Adds color and mild flavor.
  • to taste salt and pepper Adjust according to your taste.
  • to taste fresh parsley (for garnish) Can be omitted or substituted with other herbs.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a baking dish with a drizzle of olive oil.
  3. In a small bowl, whisk together the lemon juice, olive oil, garlic powder, paprika, salt, and pepper.
  4. Place the cod fillets in the prepared baking dish. Pour the lemon and olive oil mixture evenly over the fillets.
Cooking
  1. Bake in the preheated oven for about 15-20 minutes until the cod flakes easily with a fork.
  2. Garnish with fresh parsley before serving.
Serving
  1. Plate the cod and serve hot, either on its own or with a side of your favorite vegetables or rice.

Notes

For a crunchy topping, consider adding breadcrumbs mixed with melted butter. Store leftovers tightly covered in the refrigerator for up to three days and reheat gently in the oven.
