Ingredients
  

For the crust and topping
  • 1 cup all-purpose flour
  • ½ cup rolled oats
  • ½ cup brown sugar packed
  • ½ cup unsalted butter melted
  • a pinch salt
For the cheesecake filling
  • 16 oz cream cheese softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries or frozen

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the all-purpose flour, rolled oats, brown sugar, and a pinch of salt. Pour in the melted butter and mix until you achieve a crumbly texture.
  3. Press half of this mixture evenly into the bottom of a greased baking dish to form the crust.
  4. In another bowl, beat the softened cream cheese and granulated sugar until smooth. Add in the eggs one at a time, followed by vanilla extract, mixing until well combined.
  5. Gently fold in the blueberries.
  6. Pour the cheesecake mixture over the prepared crust in the baking dish.
  7. Sprinkle the remaining crisp topping over the cheesecake layer, ensuring even coverage.
Baking
  1. Place the baking dish in the preheated oven and bake for about 30 minutes, or until the edges are set and the center is slightly jiggly.
Cooling and Serving
  1. Once baked, let the bars cool in the dish for at least 20 minutes.
  2. Then, refrigerate for a couple of hours to allow them to set completely.
  3. Cut into squares and serve chilled.

Notes

Substitutions: Feel free to swap out blueberries for your favorite berries or add a touch of lemon zest for a zesty kick! Make sure your cream cheese is room temperature to ensure a smooth mixture.
