Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the all-purpose flour, rolled oats, brown sugar, and a pinch of salt. Pour in the melted butter and mix until you achieve a crumbly texture.
- Press half of this mixture evenly into the bottom of a greased baking dish to form the crust.
- In another bowl, beat the softened cream cheese and granulated sugar until smooth. Add in the eggs one at a time, followed by vanilla extract, mixing until well combined.
- Gently fold in the blueberries.
- Pour the cheesecake mixture over the prepared crust in the baking dish.
- Sprinkle the remaining crisp topping over the cheesecake layer, ensuring even coverage.
Baking
- Place the baking dish in the preheated oven and bake for about 30 minutes, or until the edges are set and the center is slightly jiggly.
Cooling and Serving
- Once baked, let the bars cool in the dish for at least 20 minutes.
- Then, refrigerate for a couple of hours to allow them to set completely.
- Cut into squares and serve chilled.
