  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 ½ cups all-purpose flour Whole wheat flour can be used as a healthier option.

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing it lightly.
  2. In a mixing bowl, mash the ripe bananas with a fork or potato masher, then stir in the melted butter until well combined.
  3. Add in the sugar and egg, mixing thoroughly until it forms a cohesive batter.
  4. Stir in the vanilla extract. In a separate bowl, combine the flour, baking soda, and salt, then gradually fold it into the banana mixture until there are no floury streaks.
  5. Pour the batter into your prepared loaf pan, smoothing the top with a spatula. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

To store, keep in an airtight container for up to three days at room temperature or in the fridge for about a week. For longer storage, slice and freeze.
