Easy Banana Bread Cinnamon Rolls

Ingredients
  

For the dough
  • 2 pieces ripe bananas, mashed
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 pinch salt
For the filling
  • 1/4 cup brown sugar
  • 1 tablespoon cinnamon
For the icing (optional)
  • 1/4 cup cream cheese
  • 1/4 cup powdered sugar

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) to get things nice and warm.
  2. In a mixing bowl, combine the mashed bananas, melted butter, granulated sugar, brown sugar, egg, and vanilla extract. Mix well until fully blended.
  3. In another bowl, whisk together the flour, baking powder, cinnamon, and a pinch of salt.
  4. Gradually add the dry ingredients into the wet mixture, stirring until a sticky dough forms.
  5. On a floured surface, roll out the dough into a rectangular shape, about 1/4 inch thick.
  6. In a separate bowl, combine the brown sugar and cinnamon for the filling. Sprinkle this mixture evenly over the rolled-out dough.
  7. Carefully roll up the dough tightly from the longer edge to form a log. Cut the log into equal slices (about 1 to 2 inches thick).
  8. Arrange the slices in a greased baking dish, leaving a little space in between each roll.
  9. Bake in the preheated oven for 20-25 minutes or until golden brown.
  10. While the rolls are baking, mix cream cheese and powdered sugar in a bowl until smooth. Drizzle over warm rolls once they’re out of the oven.

Notes

For best results, use overripe bananas for maximum flavor. Don't overmix the dough to ensure fluffy rolls.
