Preparation
- Preheat your oven to 400°F (200°C) to ensure it’s ready for your flavorful chicken.
- Pat the chicken thighs dry with paper towels. This helps in achieving beautifully crispy skin.
- In a small bowl, mix together the lemon juice, minced garlic, olive oil, salt, and pepper to make the marinade.
- Place the chicken thighs in a resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well-coated. Let it marinate for at least 15 minutes, or up to a few hours if you’re planning ahead.
Baking
- Place the marinated chicken thighs on a baking sheet lined with parchment paper. Pour any leftover marinade over the top and bake in your preheated oven for about 30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is golden brown.
- Once fully cooked, let the chicken rest for a few minutes before garnishing with fresh parsley. Serve it hot and enjoy!
Notes
For substitutions, you can switch out the chicken thighs for chicken legs or breasts but adjust the cooking time accordingly. Allow the chicken to marinate as long as possible for the best flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days.
