Ingredients
  

Main Ingredients
  • 1 pound boneless chicken breast, cubed
  • 1 cup raw cashews
  • 1 cup bell peppers, sliced (any color)
  • 1 cup broccoli florets
Sauce and Seasoning
  • 2 tablespoons soy sauce (ensure it's Halal-certified)
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons vegetable oil
  • to taste Salt and pepper
Optional Serving
  • 1 cup cooked rice for serving

Method
 

Preparation
  1. Marinate the cubed chicken with soy sauce, honey, garlic, ginger, and a pinch of salt and pepper for about 10 minutes.
Coating the Chicken
  1. Sprinkle cornstarch over the marinated chicken and toss well to coat.
Sauté the Cashews
  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Stir-fry the cashews for 3-5 minutes until golden brown. Remove and set aside.
Cooking the Chicken
  1. Add the remaining tablespoon of oil to the skillet. Stir-fry the marinated chicken on medium-high heat for 5-7 minutes until golden and cooked through.
Adding Vegetables
  1. Add sliced bell peppers and broccoli florets to the skillet. Stir-fry for another 3-4 minutes.
Combining Everything
  1. Fold the toasted cashews back into the skillet with the chicken and vegetables.
Final Adjustments
  1. Taste and adjust seasoning with soy sauce if necessary. Serve hot over cooked rice.

Notes

For substitutions, chicken can be replaced with beef, shrimp, or tofu. Do not overcrowd the skillet to maintain crispy texture.
