Ingredients
  

Main Ingredients
  • 2 large cucumbers, peeled and thinly sliced Fresh cucumbers for best crunch.
  • 1 tablespoon salt Used for drawing out moisture.
  • 3 tablespoons rice vinegar
  • 2 tablespoons sugar Can be adjusted to taste.
  • 1 tablespoon sesame oil
  • 1 teaspoon soy sauce Ensure it’s halal.
Optional Toppings
  • 2 tablespoons chopped fresh cilantro Optional.
  • 1 teaspoon sesame seeds For topping.

Method
 

Preparation
  1. Peel the cucumbers and slice them thinly. Place them in a large bowl and sprinkle with the tablespoon of salt.
  2. After about 10 minutes, drain the excess water from the cucumbers (rinse if desired).
Making the Dressing
  1. In a separate small bowl, mix together the rice vinegar, sugar, sesame oil, and soy sauce. Whisk until the sugar is completely dissolved.
Combining
  1. Pour the dressing over the cucumbers and gently toss to coat.
  2. If using, sprinkle cilantro and sesame seeds over the top.
Chill and Serve
  1. Let the salad sit in the fridge for at least 10 minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for 2-3 days. Serve cold for best flavor. Avoid overly ripe cucumbers for crunch.
