Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
Wet Ingredients
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
Filling
  • 2 cups diced apples (preferably a sweet variety)
Crumble Topping
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1 teaspoon cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with muffin liners or lightly grease each cup.
Mixing Ingredients
  1. In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, salt, and cinnamon.
  2. In a separate bowl, mix the melted butter, eggs, milk, and vanilla extract until well blended.
  3. Pour the wet ingredients into the dry mixture and stir until just combined; some lumps are okay.
  4. Gently fold in the diced apples.
Crumble Topping
  1. In a small bowl, combine brown sugar, oats, and cinnamon using a fork until crumbly.
Baking
  1. Distribute the batter evenly into the muffin tins, filling each cup about 2/3 full, then top with the crumble mixture.
  2. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  3. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack.

Notes

For best results, don't skip the crumble topping. Experiment with different sweet apple varieties for unique flavors. Store in an airtight container for up to 3 days; freeze for longer storage.
