Preparation
- Preheat your oven to 350°F (175°C).
- Line a muffin tin with muffin liners or lightly grease each cup.
Mixing Ingredients
- In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, mix the melted butter, eggs, milk, and vanilla extract until well blended.
- Pour the wet ingredients into the dry mixture and stir until just combined; some lumps are okay.
- Gently fold in the diced apples.
Crumble Topping
- In a small bowl, combine brown sugar, oats, and cinnamon using a fork until crumbly.
Baking
- Distribute the batter evenly into the muffin tins, filling each cup about 2/3 full, then top with the crumble mixture.
- Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring to a wire rack.
Notes
For best results, don't skip the crumble topping. Experiment with different sweet apple varieties for unique flavors. Store in an airtight container for up to 3 days; freeze for longer storage.
