  • 8 ounces 8 ounces of pasta (your choice: fettuccine, penne, etc.) Your preferred type of pasta
  • 4 tablespoons 4 tablespoons of butter Divided for sautéing mushrooms and making the sauce
  • 3 cloves 3 cloves of garlic, minced
  • 1 cup 1 cup of heavy cream
  • 1 cup 1 cup of freshly grated Parmesan cheese
  • 1 cup 1 cup of sliced mushrooms (button or cremini work great) Choose your preferred type of mushrooms
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. In a large pot, bring salted water to a rolling boil. Add your pasta and cook according to package instructions until al dente. Reserve ½ cup of the pasta water before draining.
  2. While the pasta is cooking, melt 2 tablespoons of butter in a large skillet over medium heat. Add sliced mushrooms, a pinch of salt, and sauté for about 3-4 minutes, or until they become soft and golden.
  3. Add the remaining 2 tablespoons of butter and minced garlic to the skillet. Sauté for an additional minute until fragrant. Pour in the heavy cream, stirring constantly to avoid curdling, and let it simmer for a few minutes.
  4. Lower the heat and stir in the Parmesan cheese until melted and well-combined. If the sauce is too thick, add some reserved pasta water to reach your desired consistency. Season with salt and freshly cracked black pepper to taste.
  5. Add your drained pasta to the skillet and toss everything together until the pasta is well-coated with the sauce.
  6. Plate your dish and finish with chopped parsley for that vibrant touch!

Notes

For a twist, try using Pecorino Romano instead of Parmesan for a sharper flavor. Experiment with different mushrooms! Shiitake or portobello can add unique flavors. Ensure your sauce simmers gently; a high heat can cause the cream to separate and form clumps. Start cooking your pasta when you begin to make the sauce to save time.
