  • 4 cups mixed vegetables (carrots, bell peppers, zucchini, broccoli) Chop into bite-sized pieces.
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon garlic powder
  • Optional: Fresh or dried herbs (rosemary, thyme) For added flavor.

Preparation
  1. Wash your mixed vegetables thoroughly and chop them into evenly sized pieces.
  2. In a large mixing bowl, combine your chopped vegetables with olive oil, salt, pepper, and garlic powder. Toss to ensure every piece is coated evenly.
Cooking
  1. Preheat the air fryer for about 5 minutes at 400°F (200°C).
  2. Place the seasoned vegetables in the air fryer basket in a single layer. Air fry at 400°F for around 12 to 15 minutes, shaking the basket halfway through.
  3. Once cooked, check if the vegetables are tender and crispy. If desired, add an extra 2-3 minutes for more crispiness.
  4. Transfer the vegetables to a serving platter and garnish with additional herbs or a squeeze of lemon before serving.

Notes

You can use any mix of fresh vegetables you prefer! Avoid overcrowding the air fryer basket for the crispiest results. To store, place in an airtight container in the refrigerator for up to 3-4 days.
