Preparation
- Boil a pot of water and add the sago pearls, cooking according to package instructions (usually 10-15 minutes) until translucent. Stir occasionally to prevent sticking. Drain and rinse under cold water.
- In a bowl, combine coconut milk and sugar, stirring until the sugar dissolves.
- Add the drained sago pearls to the coconut milk mixture and stir until well coated. Gently fold in the diced mango.
- Pour the mixture into serving cups or bowls and chill in the refrigerator for at least 15-20 minutes before serving.
- Garnish with fresh mint or extra diced mango just before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. Sago may absorb the coconut milk, so add a splash more before serving. Freezing is not recommended.
