  • 1/2 cup sago pearls Cook according to package instructions until translucent.
  • 1 cup coconut milk Adjust the sweetness according to taste.
  • 1-2 tablespoons sugar Adjust based on preference.

Preparation
  1. Boil a pot of water and add the sago pearls, cooking according to package instructions (usually 10-15 minutes) until translucent. Stir occasionally to prevent sticking. Drain and rinse under cold water.
  2. In a bowl, combine coconut milk and sugar, stirring until the sugar dissolves.
  3. Add the drained sago pearls to the coconut milk mixture and stir until well coated. Gently fold in the diced mango.
  4. Pour the mixture into serving cups or bowls and chill in the refrigerator for at least 15-20 minutes before serving.
  5. Garnish with fresh mint or extra diced mango just before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Sago may absorb the coconut milk, so add a splash more before serving. Freezing is not recommended.
