  • 2 pieces ripe mangoes, diced Reserve a handful for garnish.
  • 1 cup tapioca pearls Soak according to package instructions.
  • 1 cup coconut milk Can substitute with almond milk.
  • 3 tablespoons sugar Adjust sweetness to taste.

Method
 

Preparation
  1. In a medium-sized pot, bring 4 cups of water to a boil. Add the tapioca pearls and cook according to the package instructions, usually around 15 minutes. Stir occasionally to prevent sticking.
  2. Once the pearls are translucent and chewy, drain them and rinse under cold water. This stops the cooking process. Set them aside.
  3. In a blender, add one of the diced mangoes and blend until smooth. Reserve a handful of diced mango for garnish.
  4. In a large bowl, combine the cooked tapioca pearls, coconut milk, mango puree, and sugar. Mix well until everything is well incorporated. Adjust the sweetness to your liking!
Serving
  1. Scoop the mixture into serving bowls or glasses and garnish with the reserved diced mango pieces. Optionally, add toasted coconut or a sprig of mint.
  2. While you can serve this dessert immediately, letting it chill for about an hour will enhance the flavors and textures.

Notes

Store leftovers in an airtight container in the refrigerator. Best consumed within 2-3 days. Add a splash of coconut milk before serving to restore creaminess.
