Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the peanut butter, sweetener, and egg. Stir until smooth.
- Using a tablespoon, drop rounded balls of cookie dough onto a baking sheet lined with parchment paper.
- Gently flatten each cookie with the back of a fork to create a crisscross pattern.
- Bake for about 10-12 minutes, until the edges are golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.

Store in an airtight container at room temperature for up to a week. Freeze leftovers for up to three months and microwave to reheat.
