- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large mixing bowl, combine the yogurt, sugar, and eggs. Whisk them together until well blended.
- Pour in the vegetable oil and vanilla extract. Mix until everything is nicely incorporated.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Gradually add the dry ingredients into the yogurt mixture, folding it gently until just combined.
- Transfer the batter into your prepared cake pan, spreading it evenly.
- Bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Store leftovers in an airtight container at room temperature for up to three days or refrigerate for about a week. For longer preservation, freeze it tightly in plastic wrap and foil for up to three months. Reheat in the microwave for 15-20 seconds if desired.
