  • 1 cup plain yogurt
  • 1 cup sugar
  • 3 large eggs
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
Dry ingredients
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • a pinch of salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large mixing bowl, combine the yogurt, sugar, and eggs. Whisk them together until well blended.
  3. Pour in the vegetable oil and vanilla extract. Mix until everything is nicely incorporated.
  4. In a separate bowl, sift together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients into the yogurt mixture, folding it gently until just combined.
  6. Transfer the batter into your prepared cake pan, spreading it evenly.
  7. Bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store leftovers in an airtight container at room temperature for up to three days or refrigerate for about a week. For longer preservation, freeze it tightly in plastic wrap and foil for up to three months. Reheat in the microwave for 15-20 seconds if desired.
