  • 4 cups fresh peaches (peeled, pitted, and sliced) Use ripe, fresh peaches for the best flavor.
  • 1 cup granulated sugar (divided) 1/2 cup for peaches and 1/2 cup for batter.
Batter
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup unsalted butter (melted) Melted butter adds richness.
  • 2 teaspoons baking powder For leavening.
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract For flavor.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine your sliced peaches with 1/2 cup of sugar and let them sit for about 10 minutes.
Batter Mix
  1. In another bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, milk, melted butter, salt, and vanilla extract until smooth.
  2. Pour the batter into a greased baking dish, covering the bottom evenly.
Assembly
  1. Spoon the peach mixture over the batter. It may look messy—this is normal!
Baking
  1. Place the dish in the preheated oven and bake for 30-40 minutes, until golden and bubbly.
  2. Check with a toothpick; it should come out clean when done.
Serving
  1. Let it cool for a few minutes before serving warm.
  2. Serve with ice cream or whipped cream, if desired.

Notes

For best flavor, stick with fresh peaches. If peaches aren’t in season, frozen ones can work, just note the texture may be different. Adjust the sugar based on the sweetness of your peaches. Watch the baking time as ovens vary.
