Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 ounces) enchilada sauce
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 8 pieces flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • to taste none salt
  • to taste none pepper
Optional Toppings
  • 1 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup green onions, chopped

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add the ground beef, diced onion, and minced garlic. Cook until the beef is browned, roughly 5-7 minutes. Drain any excess grease.
  3. To the beef mixture, stir in chili powder, cumin, salt, and pepper. Add black beans and corn, mixing until evenly distributed. Pour in half of the enchilada sauce and stir well.
Assembly
  1. In a baking dish, spread a thin layer of the remaining enchilada sauce. Begin layering: place 2-3 tortillas, followed by half of the beef mixture, and sprinkle a cup of cheese. Repeat the layers, ending with a layer of tortillas topped with the remaining cheese.
Baking
  1. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
Serving
  1. Remove from the oven and let it cool for a few minutes before serving. Garnish with optional toppings like sour cream and cilantro.

Notes

This casserole can be prepared a day in advance and stored in the fridge. Reheat as needed. Can swap flour tortillas for corn if preferred. Avoid adding too much sauce to prevent soggy tortillas.
