  • 4 pieces boneless, skinless chicken breasts
  • 1 cup tzatziki sauce (store-bought or homemade)
  • 1 cup cherry tomatoes, halved
  • 1 piece cucumber, diced
  • 1/2 piece red onion, sliced
  • Salt and pepper to taste
  • Olive oil For drizzling

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Drizzle a little olive oil on the bottom of a 9x13-inch baking dish to prevent sticking.
  3. Place the boneless, skinless chicken breasts in the baking dish, fitting them into a single layer.
  4. Generously sprinkle salt and pepper on both sides of the chicken breasts for enhanced flavor.
  5. Pour the tzatziki sauce evenly over the chicken breasts, ensuring they are well-coated.
  6. Scatter the halved cherry tomatoes, diced cucumber, and sliced red onion around the chicken.
  7. Cover the baking dish with aluminum foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes, or until the chicken is fully cooked (with an internal temperature of 165°F/75°C).
  9. Once out of the oven, allow the dish to rest for a few minutes before serving warm.

Notes

To store, let it cool completely before transferring to an airtight container. It will keep in the refrigerator for up to 3-4 days. For longer storage, freeze for up to 3 months. Reheat in a preheated oven at 350°F (175°C) until heated through.
