  • 1 cup sugar Granulated sugar preferred.
  • 1 teaspoon baking soda Make sure it's fresh.

Wet Ingredients
  • 1/2 cup milk (or a non-dairy alternative) Almond milk or oat milk can be used.
  • 1/2 cup vegetable oil Can substitute with melted coconut oil.
  • 2 large eggs Use at room temperature.
  • 1 teaspoon vanilla extract
Mix-ins
  • 1 cup chocolate chips Save some for topping if desired.

Preparation
  1. Preheat the Oven: Set your oven to 350°F (175°C) and line a muffin tray with paper liners or grease it well.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, and salt until fully combined.
  3. Combine Wet Ingredients: In a separate bowl, mix the milk, vegetable oil, eggs, and vanilla extract. Whisk until combined and smooth.
  4. Combine both Mixtures: Pour the wet ingredients into the dry mixture. Fold gently using a spatula until just combined—be careful not to overmix!
  5. Add Chocolate Chips: Gently fold in the chocolate chips, saving some for topping if you desire.
  6. Fill Muffin Tray: Pour the batter into the muffin tray, filling each cup about 2/3 full.
  7. Bake: Place in the oven and bake for about 20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and Enjoy: Let the muffins cool in the tray for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a healthier twist, consider substituting the vegetable oil with unsweetened applesauce. Keep an eye on baking times as they may vary based on your oven.
