Preparation
- Preheat the Oven: Set your oven to 350°F (175°C) and line a muffin tray with paper liners or grease it well.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, and salt until fully combined.
- Combine Wet Ingredients: In a separate bowl, mix the milk, vegetable oil, eggs, and vanilla extract. Whisk until combined and smooth.
- Combine both Mixtures: Pour the wet ingredients into the dry mixture. Fold gently using a spatula until just combined—be careful not to overmix!
- Add Chocolate Chips: Gently fold in the chocolate chips, saving some for topping if you desire.
- Fill Muffin Tray: Pour the batter into the muffin tray, filling each cup about 2/3 full.
- Bake: Place in the oven and bake for about 20 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Enjoy: Let the muffins cool in the tray for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For a healthier twist, consider substituting the vegetable oil with unsweetened applesauce. Keep an eye on baking times as they may vary based on your oven.
