Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sugar
Wet Ingredients
  • 1 large egg
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
Add-Ins
  • 1/2 cup chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with paper liners or grease it lightly with oil.
Mixing Ingredients
  1. In a large mixing bowl, sift together the all-purpose flour, cocoa powder, baking powder, baking soda, salt, and sugar.
  2. In another bowl, whisk together the egg, milk, vegetable oil, and vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  4. Gently fold in the chocolate chips.
Baking
  1. Spoon the batter into your prepared muffin tin, filling each cup about 3/4 of the way full.
  2. Bake for about 20 minutes or until a toothpick inserted comes out clean or with a few crumbs.
  3. Let the muffins cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

Store muffins in an airtight container at room temperature for up to three days or freeze for up to three months. To reheat, microwave for about 20 seconds.
