  • 3 pieces ripe bananas Look for bananas with lots of brown spots for maximum sweetness.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup chocolate chips For a nutty twist, consider adding a handful of chopped walnuts or pecans.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth but still have some small chunks for texture.
  3. Add the melted butter to the mashed bananas. Stir in the sugar, beaten egg, and vanilla extract until well combined.
  4. Sprinkle the baking soda and salt over the banana mixture and stir until just combined. Gradually fold in the flour and cocoa powder until no streaks of dry ingredients remain.
  5. Gently fold in the chocolate chips, ensuring they are evenly distributed throughout the batter.
  6. Lightly grease a 9x5 inch loaf pan or line it with parchment paper. Pour the batter into the pan and smooth out the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean with only a few crumbs attached.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

This delicious bread is best enjoyed fresh, but can be stored for up to 4 days in an airtight container. It also freezes well for 2-3 months. Warm slices in the microwave for a few seconds to reheat.
