Pasta and Eggs
  • 8 ounces pasta (elbow or small shells)
  • 4 pieces hard-boiled eggs, chopped
Dressing
  • 1/2 cup mayonnaise can substitute with Greek yogurt for a lighter option
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
Vegetables
  • 1/4 cup green onions, sliced
  • 1/4 cup celery, diced
Garnish
  • Paprika for garnish

Preparation
  1. Begin by bringing a pot of salted water to a boil. Add in the pasta and cook according to the package instructions until al dente. Once done, drain and rinse with cold water to cool it down.
  2. While the pasta is cooking, peel the hard-boiled eggs and chop them into small pieces.
  3. In a large mixing bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper. Whisk everything together until smooth and creamy.
  4. Once the pasta has cooled, add it to the bowl with the dressing. Fold in the chopped eggs, green onions, and diced celery, stirring gently to combine everything well.
  5. Sprinkle paprika on top for a touch of color. Cover the salad and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.
  6. Serve this delicious pasta salad at family gatherings or as a standalone meal, and watch it become a hit!

Notes

To store, keep in an airtight container in the refrigerator for up to 3-5 days. Avoid freezing due to mayonnaise and eggs. For lighter options, substitute Greek yogurt for mayo.
