Preparation
- Preheat your oven to 350°F (180°C) to prepare for baking the meltaways.
- In a large bowl, beat the softened unsalted butter and 1/3 cup powdered sugar until light and fluffy using a hand mixer or stand mixer, about 2-3 minutes.
- Mix in the vanilla extract, Meyer lemon zest, and Meyer lemon juice until everything is well combined.
- In a separate bowl, whisk together the flour and salt. Gradually add this mixture to the buttery blend until a soft dough forms.
- Using your hands, form small balls (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper, leaving a little space in between each.
- Place the cookies in the oven and bake for about 10-12 minutes or until the edges are slightly golden. The centers should remain soft—don’t overbake!
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack. Once completely cooled, dust with powdered sugar.
