Ingredients

Main Ingredients
  • 1 cup cooked rice (any variety)
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper
  • 4 tortillas (large enough for rolling)
  • to taste Lettuce or spinach for added freshness
  • optional Salsa optional, but recommended for an extra zing!

Method

Preparation
  1. Start by cooking your rice according to package instructions. While that’s simmering, go ahead and dice your bell pepper and avocado. Don’t forget to rinse the black beans!
Mixing the Filling
  1. In a large mixing bowl, combine the cooked rice, black beans, corn, diced bell pepper, cumin, chili powder, salt, and pepper. Stir until all the ingredients are well incorporated.
Warming Tortillas
  1. If you’re using store-bought tortillas, warm them in a skillet over medium heat for about 10-15 seconds on each side.
Assembling the Burrito
  1. Take a warm tortilla and place a generous scoop of the filling in the center. Add diced avocado and lettuce or spinach, then fold the sides over the filling and roll tightly.
Serving
  1. Cut your burrito in half for a delightful presentation, and if you like, serve with salsa on the side for that added zing.

Notes

For substitutions, consider adding lentils or chickpeas for protein alternatives. Meal prep your ingredients for quicker assembly. Avoid overstuffing the burrito to prevent tearing.
