Ingredients
  

Mochi Dough
  • 1 cup glutinous rice flour Essential for the mochi texture.
  • 1/4 cup sugar Adds sweetness to the dough.
  • 3/4 cup water Combine with flour and sugar.
Filling
  • 1/2 cup fresh strawberries, chopped Fresh strawberries for the sweet filling.
  • Cornstarch (for dusting) Prevent sticking during shaping.
  • Sweetened red bean paste (optional) Can be added with strawberries for added flavor.

Preparation
  1. Wash and chop the fresh strawberries. Set them aside in a bowl.
Making the Mochi Dough
  1. In a microwave-safe bowl, combine the glutinous rice flour and sugar. Gradually add water, stirring until you have a smooth mixture. Cover the bowl with plastic wrap.
  2. Microwave the mixture for about 1-2 minutes, then stir. Return to the microwave for another 1-2 minutes, or until the dough becomes slightly translucent. After cooking, stir again until it’s smooth.
Shaping the Mochi
  1. Dust your work surface with cornstarch to prevent sticking. Scoop out a portion of the mochi dough (about 1-2 tablespoons) and flatten it in your palm.
  2. Place a spoonful of the chopped strawberries (and sweetened red bean paste, if using) in the center and fold the dough around the filling, pinching to seal it.
Serving
  1. Dust the mochi with more cornstarch to avoid sticking. Place your finished Delicious Strawberry Mochi on a platter and enjoy!

Notes

Store in an airtight container at room temperature for up to 2-3 days. For longer storage, refrigerate, but note that texture may change slightly. Let sit at room temperature to soften before enjoying.
