Preparation
- Wash and chop the fresh strawberries. Set them aside in a bowl.
Making the Mochi Dough
- In a microwave-safe bowl, combine the glutinous rice flour and sugar. Gradually add water, stirring until you have a smooth mixture. Cover the bowl with plastic wrap.
- Microwave the mixture for about 1-2 minutes, then stir. Return to the microwave for another 1-2 minutes, or until the dough becomes slightly translucent. After cooking, stir again until it’s smooth.
Shaping the Mochi
- Dust your work surface with cornstarch to prevent sticking. Scoop out a portion of the mochi dough (about 1-2 tablespoons) and flatten it in your palm.
- Place a spoonful of the chopped strawberries (and sweetened red bean paste, if using) in the center and fold the dough around the filling, pinching to seal it.
Serving
- Dust the mochi with more cornstarch to avoid sticking. Place your finished Delicious Strawberry Mochi on a platter and enjoy!
Notes
Store in an airtight container at room temperature for up to 2-3 days. For longer storage, refrigerate, but note that texture may change slightly. Let sit at room temperature to soften before enjoying.
