Preparation
- Preheat your oven to 350°F (175°C) and prepare your baking sheets by lining them with parchment paper.
- In a large mixing bowl, cream together the softened cream cheese and butter until light and fluffy, about 3-4 minutes.
- Gradually add the sugar and beat until combined for another 2 minutes.
- Mix in the vanilla extract and egg until well blended.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this mixture to the wet ingredients.
- Gently fold in the chopped strawberries and white chocolate chips if desired.
- Using a cookie scoop or tablespoon, drop the cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.
Baking
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack.
Notes
For a healthier option, substitute half of the all-purpose flour with almond flour. Avoid overbaking to maintain chewy centers.
