  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, chopped
  • 1/2 cup white chocolate chips (optional) For extra flavor

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare your baking sheets by lining them with parchment paper.
  2. In a large mixing bowl, cream together the softened cream cheese and butter until light and fluffy, about 3-4 minutes.
  3. Gradually add the sugar and beat until combined for another 2 minutes.
  4. Mix in the vanilla extract and egg until well blended.
  5. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this mixture to the wet ingredients.
  6. Gently fold in the chopped strawberries and white chocolate chips if desired.
  7. Using a cookie scoop or tablespoon, drop the cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.
Baking
  1. Bake for 12-15 minutes, or until the edges are lightly golden.
  2. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack.

Notes

For a healthier option, substitute half of the all-purpose flour with almond flour. Avoid overbaking to maintain chewy centers.
