Ingredients

  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Main Ingredients
  • 1 pound skirt steak
  • 8 small corn or flour tortillas
Toppings
  • diced tomatoes
  • shredded lettuce
  • sliced avocado
  • fresh cilantro
  • cheese
  • salsa
  • lime wedges

Method
 

Preparation
  1. In a bowl, mix the olive oil, lime juice, minced garlic, cumin, chili powder, salt, and pepper. Add the skirt steak and let it marinate for 15 to 20 minutes.
  2. Preheat your grill over medium-high heat.
  3. Remove the skirt steak from the marinade, allowing excess marinade to drip off.
  4. Slice the skirt steak against the grain into thin strips before grilling.
  5. Lightly grill or warm the tortillas until pliable.
Cooking
  1. Place the skirt steak on the grill and cook for about 4-5 minutes per side for medium-rare.
  2. Once cooked, remove the steak from the grill and let it rest for about 5 minutes.
Assembly
  1. Place a few slices of skirt steak on a tortilla, then add your desired toppings.
  2. Squeeze fresh lime juice over the top before serving.

Notes
