  1. Begin by peeling and chopping your ripe mangoes into small cubes.
  2. In a small saucepan, combine the sugar and water over medium heat. Stir until the sugar dissolves completely (about 2-3 minutes). Remove from heat and allow to cool slightly.
  3. In a blender, combine the chopped mangoes with the simple syrup and lime juice. Blend until smooth. Pulse if you prefer some texture.
  4. Pour the mixture into a shallow dish or a freezer-safe container. Cover tightly and place it in the freezer for about 4-6 hours, or until it reaches a scoopable consistency.
  5. Once frozen, scrape the sorbet with a fork before serving to make it fluffy. Scoop into bowls and enjoy!

Notes

Store in an airtight container in the freezer. Best enjoyed within two weeks, can last up to a month. Let it sit at room temperature for 5-10 minutes before scooping for a creamy texture.
