  • 2 cups broccoli florets Fresh or frozen
  • 2 cups bite-sized cauliflower pieces Fresh or frozen
  • 1 cup diced bell peppers Any color
  • 1 cup sliced carrots Fresh or pre-sliced
Dressing
  • 1/4 cup olive oil Extra virgin for best flavor
  • 4 cloves garlic, minced Freshly minced for best aroma
  • 1/2 teaspoon salt Adjust to taste
  • 1/2 teaspoon black pepper Freshly ground recommended
Topping
  • 1/3 cup grated parmesan cheese Freshly grated enhances flavor

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine broccoli, cauliflower, bell peppers, and carrots.
  3. In a separate bowl, whisk together the olive oil, minced garlic, salt, and black pepper. Pour over the prepared vegetables and toss to coat.
Cooking
  1. Line a baking sheet with parchment paper or lightly oil it. Spread the vegetable mixture in a single layer and bake for 20 minutes.
  2. Remove from the oven and sprinkle grated parmesan cheese over the vegetables. Return to the oven and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
  3. Let cool slightly before serving and garnish with fresh herbs if desired.

Notes

For substitutions, feel free to use asparagus, zucchini, or sweet potatoes. Avoid overcrowding the pan for best texture.
