  • 3 cups peeled and chopped fresh apples (Granny Smith or Honeycrisp)
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a medium bowl, combine flour, baking powder, baking soda, cinnamon, and salt. Whisk and set aside.
  3. In a large mixing bowl, whisk together granulated sugar, brown sugar, and vegetable oil. Add eggs one at a time and mix thoroughly. Stir in vanilla extract.
  4. Gradually add the dry ingredient mixture to the wet ingredients and mix until just combined. Avoid overmixing.
  5. Gently fold in the chopped apples and nuts (if using) until evenly distributed.
  6. Pour the batter into the prepared pan and spread it evenly. Tap the pan gently to remove air bubbles.
Baking
  1. Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow the cake to cool in the pan for 15 minutes before transferring it to a wire rack.
  3. Dust with powdered sugar or serve plain once cooled.

Notes

Substitute eggs with unsweetened applesauce if needed (1/4 cup per egg). Allow the cake to cool completely for optimum flavor. Avoid overmixing to prevent a dense texture.
