Preparation
- Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a medium bowl, combine flour, baking powder, baking soda, cinnamon, and salt. Whisk and set aside.
- In a large mixing bowl, whisk together granulated sugar, brown sugar, and vegetable oil. Add eggs one at a time and mix thoroughly. Stir in vanilla extract.
- Gradually add the dry ingredient mixture to the wet ingredients and mix until just combined. Avoid overmixing.
- Gently fold in the chopped apples and nuts (if using) until evenly distributed.
- Pour the batter into the prepared pan and spread it evenly. Tap the pan gently to remove air bubbles.
Baking
- Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 15 minutes before transferring it to a wire rack.
- Dust with powdered sugar or serve plain once cooled.
Notes
Substitute eggs with unsweetened applesauce if needed (1/4 cup per egg). Allow the cake to cool completely for optimum flavor. Avoid overmixing to prevent a dense texture.
