  • 1.5 pounds ground beef
  • 1 cup caramelized onions (about 2 large onions)
  • 1 cup breadcbs
  • 2 large eggs
  • 1 cup Swiss cheese, shredded
  • 1 packet onion soup mix
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper
  • 0.25 cup ketchup (for topping)
For Caramelizing Onions
  • 2 tablespoons butter

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, melt 2 tablespoons of butter. Add sliced onions and cook slowly, stirring occasionally, until they are golden brown and caramelized (about 15-20 minutes). Set aside to cool.
  3. In a large mixing bowl, combine ground beef, caramelized onions, breadcbs, eggs, half the Swiss cheese, onion soup mix, garlic powder, salt, and pepper.
  4. Shape the mixture into a loaf shape and place it in a baking dish.
  5. Glaze the top with ketchup and sprinkle the remaining Swiss cheese over it.
Cooking
  1. Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 160°F (70°C).
  2. Allow the meatloaf to rest for 10 minutes before slicing. Serve warm, and enjoy!

Notes

Don’t rush caramelizing onions as it's key to intensifying flavor. For extra moisture, add a splash of beef broth. You can experiment with different cheeses and avoid overmixing to keep the meatloaf tender.
