Preparation
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, melt 2 tablespoons of butter. Add sliced onions and cook slowly, stirring occasionally, until they are golden brown and caramelized (about 15-20 minutes). Set aside to cool.
- In a large mixing bowl, combine ground beef, caramelized onions, breadcbs, eggs, half the Swiss cheese, onion soup mix, garlic powder, salt, and pepper.
- Shape the mixture into a loaf shape and place it in a baking dish.
- Glaze the top with ketchup and sprinkle the remaining Swiss cheese over it.
Cooking
- Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 160°F (70°C).
- Allow the meatloaf to rest for 10 minutes before slicing. Serve warm, and enjoy!
Notes
Don’t rush caramelizing onions as it's key to intensifying flavor. For extra moisture, add a splash of beef broth. You can experiment with different cheeses and avoid overmixing to keep the meatloaf tender.
