Main Ingredients
  • 2 cups cooked chicken, shredded or diced Use rotisserie chicken for a quicker meal.
  • 3 cups fresh spinach Or use 1 cup frozen, thawed and drained.
  • 2 cups cooked pasta Any shape, penne works great.
  • 1 cup cream of chicken soup
  • 1/2 cup sour cream
  • 1 cup shredded cheese Cheddar or mozzarella.
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil For sautéing spinach if using fresh.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. If using fresh spinach, heat the olive oil in a pan over medium heat, add the spinach, and sauté until wilted, about 2-3 minutes. If using frozen spinach, ensure it’s adequately thawed and drained.
  3. In a large mixing bowl, combine the shredded chicken, cooked pasta, sautéed spinach, cream of chicken soup, sour cream, garlic powder, onion powder, salt, and pepper. Stir until everything is well incorporated.
  4. Pour the mixture into a greased casserole dish. Sprinkle the top with shredded cheese and grated Parmesan.
Cooking
  1. Place the casserole in the preheated oven and bake for 25-30 minutes until the cheese is bubbly and golden brown.

Notes

For best flavor, experiment with cheese types and add breadcbs for a crunchy topping. You can prepare the casserole a day ahead and refrigerate it. Reheat in the oven for best texture.
