Preparation
- Preheat your oven to 200°C (390°F).
- Roll out your puff pastry on a lightly floured surface until it’s about 3 mm thick. Cut it into circles or squares—roughly 10 cm by 10 cm works great.
Cooking the Filling
- In a frying pan over medium heat, melt the butter. Add the finely chopped onion and sauté until soft and golden, about 5-7 minutes. Season with salt and pepper to taste.
- In a bowl, grate or chop the cheese and mix in the cooked onions. Adjust the seasoning based on your preferences.
Assembling the Pasties
- Spoon a generous amount of the cheese and onion mixture into the center of each pastry circle.
- Fold the pastry over to create a semi-circle (or a rectangle) and crimp the edges to seal securely.
Baking
- Beat the egg and brush it over each pasty.
- Place the pasties on a baking tray lined with parchment paper and bake in the preheated oven for 20-25 minutes or until golden brown and puffed up.
Serving
- Allow to cool slightly before serving. Enjoy them warm!
Notes
Allow pasties to cool completely before storing in an airtight container; they'll keep for up to 3 days in the fridge. Freeze before baking for longer storage.
