Ingredients

Pastry
  • 500 g puff pastry Can substitute with shortcrust pastry.
Filling
  • 200 g cheese (cheddar or your choice) Feel free to experiment with different cheese types.
  • 1 large onion, finely chopped Consider using red onions for a sweeter flavor.
  • 1 tablespoon butter Used for sautéing onions.
  • to taste Salt and pepper Adjust according to your preference.
  • 1 egg (for egg wash) Gives a golden color when baked.

Method

Preparation
  1. Preheat your oven to 200°C (390°F).
  2. Roll out your puff pastry on a lightly floured surface until it’s about 3 mm thick. Cut it into circles or squares—roughly 10 cm by 10 cm works great.
Cooking the Filling
  1. In a frying pan over medium heat, melt the butter. Add the finely chopped onion and sauté until soft and golden, about 5-7 minutes. Season with salt and pepper to taste.
  2. In a bowl, grate or chop the cheese and mix in the cooked onions. Adjust the seasoning based on your preferences.
Assembling the Pasties
  1. Spoon a generous amount of the cheese and onion mixture into the center of each pastry circle.
  2. Fold the pastry over to create a semi-circle (or a rectangle) and crimp the edges to seal securely.
Baking
  1. Beat the egg and brush it over each pasty.
  2. Place the pasties on a baking tray lined with parchment paper and bake in the preheated oven for 20-25 minutes or until golden brown and puffed up.
Serving
  1. Allow to cool slightly before serving. Enjoy them warm!

Notes

Allow pasties to cool completely before storing in an airtight container; they'll keep for up to 3 days in the fridge. Freeze before baking for longer storage.
