Main ingredients
  • 1 pound chicken, beef, or vegetables (for skewers) Choice of protein or vegetables
  • 1 cup BBQ sauce For marinating
For Cowboy Butter
  • 1 cup melted butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon paprika
  • Salt and pepper to taste

Method
 

Preparation
  1. Start by soaking wooden skewers in water for at least 30 minutes to prevent them from burning on the grill. If you’re using metal skewers, you can skip this step.
  2. If using chicken or beef, marinate them in BBQ sauce for at least 30 minutes in the refrigerator for extra flavor. For vegetables, toss them in some olive oil, salt, and pepper.
  3. Once marinated, thread the chicken, beef, or veggies onto the skewers, leaving a little space between each item.
Cowboy Butter Preparation
  1. In a bowl, combine melted butter, minced garlic, chopped parsley, lemon juice, paprika, salt, and pepper. Stir until well mixed.
Grilling
  1. Preheat the grill to medium-high.
  2. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until the meat is cooked through and the veggies are tender.
Serve
  1. Remove the skewers from the grill and drizzle generously with Cowboy Butter. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. You can freeze cooked skewers for up to 2 months. Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes.
