Ingredients
  

For the cookie dough
  • 2 cups almond flour Lightly spoon into your measuring cup for accuracy.
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened or coconut oil for a dairy-free version.
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Optional toppings

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened butter and granulated sugar. Beat until light and fluffy.
  3. Crack the egg into the mixture and add the vanilla extract. Mix until smooth.
  4. In a separate bowl, whisk together the almond flour, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients, stirring until just combined. Avoid overmixing.
  6. Using a tablespoon, scoop the dough and roll into balls. Place them on a parchment-lined baking sheet about 2 inches apart and flatten slightly if desired.
Baking
  1. Bake in the preheated oven for 10-12 minutes, until the edges are golden brown.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze for up to three months, allowing to thaw at room temperature when ready to enjoy.
