Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the softened butter and granulated sugar. Beat until light and fluffy.
- Crack the egg into the mixture and add the vanilla extract. Mix until smooth.
- In a separate bowl, whisk together the almond flour, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined. Avoid overmixing.
- Using a tablespoon, scoop the dough and roll into balls. Place them on a parchment-lined baking sheet about 2 inches apart and flatten slightly if desired.
Baking
- Bake in the preheated oven for 10-12 minutes, until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to a week. Freeze for up to three months, allowing to thaw at room temperature when ready to enjoy.
