  • 2 cups water For cooking quinoa

Method
 

Preparation
  1. Begin by rinsing the quinoa under cold water to remove any bitterness.
  2. In a medium-sized pot, combine 1 cup of rinsed quinoa and 2 cups of water. Bring this mixture to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and water has absorbed.
  3. Once the quinoa is cooked, remove it from heat and let it cool slightly.
  4. In a large mixing bowl, combine the cooked quinoa, dark chocolate chips, honey or maple syrup, vanilla extract, and a pinch of salt. Mix until everything is well incorporated.
Assembly
  1. Grease a 9x9 inch baking dish or line it with parchment paper.
  2. Pour the quinoa mixture into the dish and press it down firmly to form an even layer.
  3. Place the baking dish in the refrigerator for at least an hour to allow the mixture to firm up.
