Preparation
- Begin by rinsing the quinoa under cold water to remove any bitterness.
- In a medium-sized pot, combine 1 cup of rinsed quinoa and 2 cups of water. Bring this mixture to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and water has absorbed.
- Once the quinoa is cooked, remove it from heat and let it cool slightly.
- In a large mixing bowl, combine the cooked quinoa, dark chocolate chips, honey or maple syrup, vanilla extract, and a pinch of salt. Mix until everything is well incorporated.
Assembly
- Grease a 9x9 inch baking dish or line it with parchment paper.
- Pour the quinoa mixture into the dish and press it down firmly to form an even layer.
- Place the baking dish in the refrigerator for at least an hour to allow the mixture to firm up.
