Preparation
- In a saucepan, combine milk, sugar, and vanilla. Heat over medium until warm.
- In a bowl, whisk the eggs. Gradually whisk in the warm milk mixture to temper the eggs.
- Cook on low heat while whisking until the custard thickens. Set aside to cool.
Baking
- Preheat your oven to 400°F (200°C).
- On a floured surface, roll out the thawed puff pastry sheets to smooth out any creases. Cut into squares, about 4x4 inches.
- Place a spoonful of custard in the center of each pastry square, top with a couple of mixed berries.
- Fold the corners of the pastry over the filling, sealing them with a fork. Brush the tops with egg wash for that golden finish.
- Place the pastries on a lined baking sheet and bake for about 20-25 minutes or until golden brown.
- Remove from the oven, let cool slightly, then dust with powdered sugar before serving.
