Ingredients
  

Pastry and Filling
  • 2 sheets puff pastry (thawed)
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 cups custard (made from 2 cups of milk, 3 eggs, 1 cup of sugar, and 1 teaspoon of vanilla extract)
  • 1 egg for egg wash
Finishing Touch
  • to taste none powdered sugar (for dusting)

Method
 

Preparation
  1. In a saucepan, combine milk, sugar, and vanilla. Heat over medium until warm.
  2. In a bowl, whisk the eggs. Gradually whisk in the warm milk mixture to temper the eggs.
  3. Cook on low heat while whisking until the custard thickens. Set aside to cool.
Baking
  1. Preheat your oven to 400°F (200°C).
  2. On a floured surface, roll out the thawed puff pastry sheets to smooth out any creases. Cut into squares, about 4x4 inches.
  3. Place a spoonful of custard in the center of each pastry square, top with a couple of mixed berries.
  4. Fold the corners of the pastry over the filling, sealing them with a fork. Brush the tops with egg wash for that golden finish.
  5. Place the pastries on a lined baking sheet and bake for about 20-25 minutes or until golden brown.
  6. Remove from the oven, let cool slightly, then dust with powdered sugar before serving.

Notes

Top tips: Feel free to swap custard ingredients for dairy-free alternatives. Allow custard to cool to prevent a soggy pastry. Avoid overfilling to ensure easy sealing.
