Preparation
  1. Using a sharp knife, carefully slice each Medjool date lengthwise, creating a small pocket for the stuffing. Remove the pit if it’s still inside.
Make the Filling
  1. In a bowl, combine the softened goat cheese with chopped walnuts. Mix well using a fork, and add honey if desired for extra sweetness.
Stuff the Dates
  1. Using a small spoon, generously fill each date with the goat cheese and walnut mixture. Use your fingers to pack in the filling as needed.
Presentation
  1. Arrange the stuffed dates on a serving platter. If using fresh herbs, sprinkle them over the top for presentation.
Optional Sweet Drizzle
  1. Drizzle honey over the stuffed dates just before serving if you prefer a sweeter flavor.
