Preparation
- Preheat the oven to 350°F (175°C).
- Grease a loaf pan and set it aside.
- In a bowl, combine flour, baking soda, salt, and cinnamon. Whisk them together until well mixed.
- In a separate large bowl, beat the softened butter, sugar, and brown sugar until fluffy, about 2-3 minutes.
- Incorporate the eggs, one at a time, mixing well after each addition. Then add the vanilla extract.
- Slowly add the dry mixture to the butter mixture, alternating with the milk, starting and ending with dry ingredients. Gently fold until combined.
- Carefully fold in the chopped dates and nuts until evenly distributed in the batter.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Baking
- Place the loaf pan in the oven and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
Cooling
- Let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
- Slice and enjoy!
Notes
Nuts can be substituted with sunflower seeds or pumpkin seeds. Dried figs or raisins can replace dates. Wrap tightly for a moister bread. Store at room temperature for 3 days or refrigerate for a week.
