  • 1 cup pitted dates, chopped Use fresh, plump dates for the best flavor.
  • 1 cup boiling water To soften the dates.
  • 1 teaspoon baking soda Added to the date mixture.
  • 1/2 cup unsalted butter, softened Can be substituted with coconut oil for a dairy-free option.
  • 1 cup brown sugar
  • 2 pieces eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a bowl, combine chopped dates and boiling water. Stir in the baking soda and let it sit for about 15 minutes to soften the dates.
  3. In a large bowl, cream together the softened unsalted butter and brown sugar until light and fluffy, about 3-5 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Once the date mixture has cooled, mix it into the creamed butter and sugar.
  6. In another bowl, sift together the all-purpose flour, baking powder, and salt. Gradually add this dry mixture to the wet mixture, stirring gently until just combined.
Baking
  1. Pour the batter into the prepared cake pan.
  2. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Cooling and Serving
  1. Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack. Slice and enjoy your Date Cake warm or at room temperature!

Notes

Store the Date Cake covered at room temperature for up to three days, or refrigerate for longer freshness. Can be frozen for up to three months. Reheat individual slices in the microwave for 15-20 seconds, or warm in an oven at 300°F (150°C).
