Ingredients
  

Main Ingredients
  • 1 cup Medjool dates, pitted
  • 1 cup walnuts or pecans Can substitute with sunflower seeds or pumpkin seeds
  • 1/2 cup cocoa powder
  • 1/4 cup almond flour
  • 1 teaspoon vanilla extract
  • 1 pinch salt
Optional Coating
  • Desiccated coconut or additional cocoa powder For coating the balls

Method
 

Preparation
  1. Start by pitting your Medjool dates if they aren't already pitted. Measure out all your ingredients to make the process smoother.
  2. In a food processor, pulse the walnuts or pecans until finely chopped but not powdered. You want some texture!
  3. Add the pitted dates, cocoa powder, almond flour, vanilla extract, and a pinch of salt to the food processor. Blend until a sticky, well-combined dough forms, about 30 seconds to 1 minute.
Forming
  1. Take a small portion of the mixture and roll it into a ball about the size of a tablespoon. Repeat until all the mixture is used.
  2. For added flavor and presentation, roll each ball in desiccated coconut or cocoa powder, if desired.
Chilling
  1. Place the rolled Date Brownie Balls on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to help them set and firm up.

Notes

Store these Date Brownie Balls in an airtight container for up to one week in the refrigerator. For longer storage, freeze them for up to three months without needing to reheat.
