  • 1 cup pitted dates Medjool dates are preferred for their softness and flavor.
  • 1/2 cup dark chocolate chips
  • 1/4 teaspoon sea salt For topping.
  • 1 tablespoon coconut oil (optional) For added richness.

Preparation
  1. Prepare Your Pan: Line an 8×8-inch pan with parchment paper, leaving some overhang for easier removal later.
  2. Blend the Nuts: In a food processor, add the mixed nuts and pulse them a few times until they’re finely chopped but not completely ground.
  3. Add the Dates: Add in the pitted dates and coconut oil (if using). Pulse until well combined and starts to stick together.
  4. Incorporate Chocolate: Fold in the dark chocolate chips until evenly distributed.
  5. Press and Set: Transfer the mixture to your prepared pan, spreading it out evenly and pressing down firmly.
  6. Chill: Sprinkle the sea salt on top and refrigerate for at least 2 hours, or until set.
  7. Slice and Enjoy: Lift the mixture out using the parchment overhang, slice into bars, and enjoy!

Notes

These bars can be customized with different nuts or dried fruits. They can be stored in an airtight container in the refrigerator for up to one week or frozen for up to three months.
