Ingredients

Main Ingredients
  • 1 cup mixed nuts (almonds, walnuts, pecans) Feel free to substitute with your personal favorites or available nuts.
  • 1 cup dates, pitted Make sure dates are soft but not overly dried out.
  • 1/2 cup dark chocolate chips Ensure it is a dairy-free option for a vegan recipe.
  • 1/4 teaspoon sea salt
  • 1 tablespoon coconut oil (optional) Use to enhance texture if needed.

Method

Preparation
  1. Prepare Your Ingredients: Start by pitting the dates if they aren’t pitted yet. Gather your mixed nuts, ensuring they are chopped coarsely to enhance the texture of your bars.
  2. Blend the Base: In a food processor, combine the pitted dates and mixed nuts. Pulse until the mixture becomes crumbly yet holds together when pressed.
  3. Melt the Chocolate: Meanwhile, melt the dark chocolate chips in a microwave-safe bowl. Heat in 30-second intervals, stirring each time until completely smooth.
  4. Combine: In a mixing bowl, combine the blended nut-date mixture with the melted chocolate and sea salt. If using coconut oil, mix it in as well.
  5. Press into a Pan: Line an 8×8-inch baking dish with parchment paper for easy removal. Pour the mixture into the dish and press it down evenly.
  6. Chill: Place the dish in the refrigerator for about 2 hours, or until the mixture is firm and set.
  7. Slice and Enjoy: Once ready, remove from the pan and cut into bars.

Notes

These bars can be stored in an airtight container in the refrigerator for up to a week or frozen for up to 3 months. Allow to sit at room temperature for about 10 minutes before enjoying if frozen.
