  • 1 lb boneless, skinless chicken thighs
  • 12 oz pasta (your choice – gluten-free if desired)
  • 1 cup dairy-free cream (like coconut cream or cashew cream)
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 1 cup vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Method
 

Cooking Pasta
  1. In a large pot, bring salted water to a boil. Add your choice of pasta and cook according to package instructions until al dente. Drain and set aside.
Sautéing Chicken
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Season the chicken thighs with salt and pepper. Add them to the skillet, cooking for about 5-7 minutes on each side or until fully cooked and golden brown. Remove the chicken from the skillet and set aside.
Preparing Sauce
  1. In the same skillet, add diced onions and minced garlic. Sauté for about 2-3 minutes until fragrant. Pour in the vegetable broth and scrape the bottom of the pan to release any flavorful bits.
  2. Reduce the heat and stir in the dairy-free cream and Italian seasoning, allowing the mixture to simmer for about 5 minutes to thicken slightly.
Combining Ingredients
  1. Slice the cooked chicken and return it to the skillet. Add the drained pasta and toss everything together until well combined. Season with additional salt and pepper to taste, if needed.
