Main Ingredients
  • 2 cups diced cucumbers Choose the freshest available.
  • 2 cups sliced strawberries The juicier, the better.
  • 1 cup diced watermelon Optional, for an extra burst of flavor.
  • 2 tablespoons fresh lemon juice
  • ¼ cup fresh mint leaves, chopped Can be substituted with basil.
  • 2 tablespoons olive oil
  • to taste Salt and pepper

Method

Preparation
  1. Start by washing your cucumbers and strawberries well. Dice the cucumbers into bite-sized pieces and slice the strawberries. If you’re using watermelon, ensure it’s also diced uniformly.
  2. In a small bowl, whisk together the lemon juice, olive oil, a pinch of salt, and pepper. This dressing will enhance the flavors beautifully.
  3. In a large mixing bowl, gently toss together the diced cucumbers, sliced strawberries, and watermelon. Drizzle the dressing over the salad and toss to combine.
  4. Lastly, sprinkle the chopped mint leaves over the salad and give it one last gentle toss. This step is crucial to ensure the mint evenly distributes its refreshing aroma.
  5. Transfer your finished salad to a serving dish or bowl and enjoy it immediately.

Notes
