Preparation
- In a bowl, mix the softened cream cheese with the freshly chopped herbs, salt, and pepper until you achieve a smooth consistency.
- Wash the cucumber thoroughly and slice it thinly into rounds, about 1/8 inch thick.
Assembly
- Take a slice of bread and spread a generous amount of the herb cream cheese mixture on one side.
- Lay cucumber slices on top, overlapping them just a bit for a beautiful presentation.
- Place a second slice of bread on top, cream cheese side down, and gently press to secure.
- Trim the crusts off each sandwich using a sharp knife and cut them into quarters or halves.
Chill and Serve
- Place the sandwiches on a platter, cover with plastic wrap, and refrigerate for about 15 minutes before serving.
Notes
For best quality, serve fresh. Store leftovers in an airtight container in the fridge for up to 2 days. If freezing, wrap tightly in plastic for up to a month and reheat lightly in the microwave.
