Ingredients
  

Main Ingredients
  • 1 large large cucumber Wash thoroughly.
  • 8 slices white or whole grain bread Choose your preferred type.
  • 4 oz cream cheese (softened) Bring to room temperature.
  • 1-2 tablespoons fresh dill or parsley (finely chopped) Select your preferred herb.
  • to taste Salt and pepper Season to your liking.

Method
 

Preparation
  1. In a bowl, mix the softened cream cheese with the freshly chopped herbs, salt, and pepper until you achieve a smooth consistency.
  2. Wash the cucumber thoroughly and slice it thinly into rounds, about 1/8 inch thick.
Assembly
  1. Take a slice of bread and spread a generous amount of the herb cream cheese mixture on one side.
  2. Lay cucumber slices on top, overlapping them just a bit for a beautiful presentation.
  3. Place a second slice of bread on top, cream cheese side down, and gently press to secure.
  4. Trim the crusts off each sandwich using a sharp knife and cut them into quarters or halves.
Chill and Serve
  1. Place the sandwiches on a platter, cover with plastic wrap, and refrigerate for about 15 minutes before serving.

Notes

For best quality, serve fresh. Store leftovers in an airtight container in the fridge for up to 2 days. If freezing, wrap tightly in plastic for up to a month and reheat lightly in the microwave.
