Ingredients
  

Main Ingredients
  • 2 large large cucumbers, thinly sliced
  • 1 small small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • ΒΌ cup fresh dill, chopped (or parsley if you prefer) Dill can be substituted with parsley for a different flavor.
Dressing Ingredients
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Method
 

Preparation
  1. Wash and thinly slice the cucumbers. Optionally, peel for a smoother texture.
  2. Slice the red onion and halve the cherry tomatoes.
Mixing
  1. In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper until well combined.
  2. In a large mixing bowl, add the sliced cucumbers, red onions, cherry tomatoes, and chopped dill or parsley.
  3. Pour the dressing over the salad mixture and toss gently to coat all the vegetables evenly.
Chilling
  1. Let the salad marinate in the refrigerator for at least 10 minutes before serving.

Notes
