Method
 

Preparation
  1. Wash and thoroughly dry the cucumbers. Slice them into rounds about half an inch thick.
  2. In a mixing bowl, combine the softened cream cheese, chopped herbs, salt, and pepper. Mix until the ingredients are well incorporated and creamy.
Assembly
  1. Take a cucumber slice and spread a generous layer of the cream cheese mixture on top, smoothing it to cover the slice entirely.
  2. Choose your favorite optional toppings and place them on top of the cream cheese. This could be a sliver of smoked salmon or a cute cherry tomato half.
Serving
  1. Arrange the bites on a platter for serving. Enjoy them fresh, as they’re best eaten right away.

Notes

For best results, slice cucumbers just before serving to maintain their crispness. Store the cream cheese filling separately if you have leftovers to keep cucumbers crispy.
