Preparation
  1. Wash your cucumbers and apples thoroughly. Peel the cucumbers if you prefer, but leaving the skins adds nice color and crunch.
  2. Core the apples and cut them into bite-sized pieces.
Mixing
  1. In a large mixing bowl, toss the sliced cucumbers and diced apples together.
Dressing
  1. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  2. Pour the dressing over the cucumber and apple mixture and gently toss to coat evenly.
Serving
  1. Taste and adjust seasoning as needed.
  2. Serve it cold for maximum crunch, ideally right after tossing.

Notes

Best enjoyed fresh but can be refrigerated for 1-2 days. For serving, consider keeping the dressing separate until ready to maintain crunchiness. Substitute apples with pears, or add raisins or walnuts for extra texture.
