Ingredients
  

Base Ingredients
  • 2 cups sweet corn (fresh, frozen, or canned, drained) Use thawed frozen or well-drained canned corn.
  • 1 cup Fritos corn chips Add just before serving to retain crunch.
  • 1 cup cherry tomatoes (halved)
  • 1 piece bell pepper, diced Use any color: red, yellow, or green.
  • ¼ cup red onion, finely chopped
Dressing Ingredients
  • ½ cup shredded cheddar cheese Can substitute with pepper jack or feta.
  • ½ cup mayonnaise Greek yogurt can be used for a lighter version.
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder Optional for added kick.
  • to taste Salt and pepper
  • to taste Chopped cilantro (for garnish, optional) Add fresh before serving.

Method
 

Preparation
  1. Gather all ingredients. If using frozen corn, thaw it in advance. If using canned corn, drain and rinse thoroughly.
Mix the Base
  1. In a large mixing bowl, combine sweet corn, cherry tomatoes, diced bell pepper, and red onion. Stir gently to mix.
Create the Dressing
  1. In a separate bowl, whisk together mayonnaise (or Greek yogurt), lime juice, chili powder, and a pinch of salt and pepper until smooth.
Combine and Crunch
  1. Pour the dressing over the corn mixture and toss until evenly coated. Gently fold in Fritos and cheddar cheese.
Taste and Adjust
  1. Taste the salad and adjust seasoning with additional salt, pepper, or lime juice as needed.
Chill (Optional)
  1. Let the salad chill in the refrigerator for about 30 minutes, if desired, to enhance flavors.
Serve and Garnish
  1. Stir the salad before serving and garnish with chopped cilantro, if using. Serve cold.

Notes

For the best texture, add Fritos just before serving to maintain their crunch. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days but will lose crunchiness over time.
