- Gather all ingredients. If using frozen corn, thaw it in advance. If using canned corn, drain and rinse thoroughly.
Mix the Base
- In a large mixing bowl, combine sweet corn, cherry tomatoes, diced bell pepper, and red onion. Stir gently to mix.
Create the Dressing
- In a separate bowl, whisk together mayonnaise (or Greek yogurt), lime juice, chili powder, and a pinch of salt and pepper until smooth.
Combine and Crunch
- Pour the dressing over the corn mixture and toss until evenly coated. Gently fold in Fritos and cheddar cheese.
Taste and Adjust
- Taste the salad and adjust seasoning with additional salt, pepper, or lime juice as needed.
Chill (Optional)
- Let the salad chill in the refrigerator for about 30 minutes, if desired, to enhance flavors.
Serve and Garnish

Notes
For the best texture, add Fritos just before serving to maintain their crunch. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days but will lose crunchiness over time.
