Ingredients
  

For the Cookies
  • 1 cup unsalted butter (softened) Make sure it's softened for easy mixing.
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour Sifted for best results.
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
For the Pink Frosting
  • 1 cup powdered sugar
  • 2 tablespoons unsalted butter (softened) Make sure it's softened.
  • 1 tablespoon milk Adjust for desired frosting consistency.
  • 1 drop pink food coloring (optional) Use as desired for color.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  3. Crack in the eggs and add the vanilla extract, mixing until well incorporated.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to your wet mixture, mixing just until combined.
  5. Use a cookie scoop or a tablespoon to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake in the preheated oven for 10 to 12 minutes or until the edges are lightly golden.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
  3. Prepare the pink frosting by beating together all frosting ingredients until smooth, then frost your cookies once cooled.

Notes
